Why is our damask rose water so special and how is it made?

Damask roses hold a special place in the hearts of the farmers at our small Uttarakhand farm. In the fresh air, far away even from motorable roads, leave aside pollution, our farmers collect Damask roses with their hands early in the morning before full sun light falls on them to retain the maximum goodness of these flowers.

The farmers here have incomparable expertise and they have passed down the know-how through generations. They use a single pass steam herbal distillation process to make sure that our rose water is of the best grade.

So, our bottles of rose water just contains the steam collected from distillation of freshly collected Damask rose petals, and nothing else.

Their mild and soothing aroma differentiates Damask roses from the usual rose. Unlike the usual rose, Damask rose does not have a heavy fragrance or a bitterness in taste. The softness in their flavor profile sets them apart from any rose water available out there.

Here’s a recipe of Mango lassi to relish:

  • 2 cups plain yogurt
  • 1/4 cup water
  • 1/2 cup ice cubes
  • 1-1/4 cups ripe, diced mango
  • 2 tablespoons honey
  • 1 teaspoon of pure edible damask rose water

Blend all ingredients except the yogurt in a blender for 30 seconds on high speed. Add the yogurt and process until frothy. Serve the lassi strained or unstrained over crushed ice. You can also add gut cooling basil seeds to it.
